It’s raining season here in Bogor, West Java, Indonesia. And in this cold and raining day, a bowl of hot creamy delicious soup sounds perfect, doesn’t it? I made broccoli soup before but This soup hit the spot perfectly. And let me tell you it is the BEST broccoli cheese soup that I have had! Hot soup with homemade french bread was fantastic!!! I love how creamy it was and the veggies inside gave it a nice texture to the soup. I’ll post the recipe for French Baguettes later.
GLUTEN FREE BROCCOLI CHEESE SOUP
1 tablespoon melted butter
½ medium chopped onion
¼ cup melted butter
¼ cup rice flour (gluten free)
2 cups milk ( i used skimmed milk)
2 cups chicken stock
½ lb fresh broccoli (about 1 cup), chopped into tiny pieces
1 cup carrot, julienned
¼ teaspoon nutmeg
100 gram grated sharp cheddar cheese
1 tsp paprika/chilli powder
1/2 tsp dry mustard (you can skip it if you don’t have it)
salt and pepper to taste
1. Saute the onion in 1 tablespoon melted butter and set aside. In a large pot whisk together the melted butter and flour over medium heat for about 3-4 minutes.
2. Slowly whisk in the milk and chicken stock. Let it simmer for about 10 minutes.
3. Add the broccoli, carrots, and onions. Let them simmer on medium low for about 25 minutes until the broccoli and carrots are tender.
4. Add nutmeg, chilli powder, dry mustard, salt and pepper and sharp cheddar cheese. Let the cheese melt and then serve. For a smoother soup puree it in a blender… but The chunks taste better in my opinion.
