Kaasstengel Cheese

Kaasstengels Cheese Cookies or Kue Kastengel as Indonesians called it, is a traditional cheese cookies that are most often  consumed during Eid Mubarak Day. Influenced by Dutch colonization of Indonesia in the 1600’s, the Indonesian people took Dutch culture and made it their own.

Here is the recipe :

Ingredients : 

150 gram margarine/butter

1/4 tsp salt

1/4 tsp powder chicken stock

1 egg yolk

1 tbsp liquid milk

100 gram grated  cheddar cheese, put it in the oven for 5 minute to make it slightly dry.

200 gram pastry flour

1/4 tsp baking powder

Coating Ingredients :

2 egg yolks

1 tsp liquid milk

Topping :

100 gram grated Cheddar Cheese

How To Make :

1. Mix margarine/butter , salt and powdered chicken stock for 1 minute till it’s soften. Add egg yolk and milk.  Mix it till it combined well.

2. Add cheddar cheese. Mix well. Add pastry flour and baking powder while it’s shieved and mix it well.

3. Roll the dough with rolling pin  lengthwise. Cut into pieces 3 cm x 1cm using pizza cutter.

 4. Place it on a parchment paper lined baking sheet and smear the surface with the coating ingredients. Sprinkle it with grated cheddar cheese.

5. Bake it for 45 minutes to 140 Celsius or till it’s golden brown.
